There is an abundance of gorgeous blueberries around here at the moment. Another thing to love about Spring in Australia! Though officially it is still winter, the arrival of blueberries and blood oranges indicate that citrus season is going to be taken over by berry season pretty quickly. And if you know me, I am not a cold weather person at all. I need all the sunshine and the daylight and bright colours to keep me happy. I have another blueberry cake in the making but these galettes are for everyone to enjoy. They need zero effort and are a great way of using up a whole lot of blueberries. Galettes are my favourite thing to take to picnics and these are always a hit with friends and family. Blueberry Galettes Serves 4 2 sheets short-crust pastry, slightly thawed 500 g (2 punnets) fresh blueberries (could use frozen too) 1.5 tbsp cornstarch 1 tsp finely grated lemon zest 1 tbsp lemon juice 1/4 cup castor sugar (more if you like it sweeter) Fresh rosemary leaves 1 tbsp chia seeds (optional) 1 egg 1 tbsp water Extra sugar, for dusting Preheat oven to 180 degrees C (160 degrees C if using a fan forced oven). Raspberry flavoured Maltesers Cheesecake

Disclosure: This post is brought to you by Maltesers. As always all opinions expressed in this post are entirely my own. Apparently Valentine’s Day came twice this year! The first one back in February, was a low key affair but when I had the opportunity to taste these new Raspberry flavoured Maltesers, it was love at first sight. Or you may call it love at first bite. Look at the packaging folks! It’s pink and red :) Armed with these delicious little bombs bursting with flavour and even my pink personalised Maltesers apron, I knew I was about to whip up a delicious storm. Since I can’t have enough of the chocolate – raspberry flavour combo, I thought a cheesecake would be a great way of enjoying them. I’ve not only used them as a decoration on top of the cheesecake but also in the filling. A little warning though, these are addictive so refrain from eating them before they go into the cheesecake. What I was pleasantly surprised though was that they held up to baking really well and turned into gooey puddles of yumminess. Easy Tiramisu Cups

Light, easy and deliciously coffee-ish Tiramisu cups. Egg-less and quick to put together. Sometimes it is so nice to forget about seasons and seasonal produce and just think of DESSERT! Aka sweet, creamy, indulgent, moist, gooey, addictive....you get my point? Dessert without planning, without complicated ingredients, without neat layers or perfectly piped tops. Just the pleasure we derive from a simple but seriously delicious treat. I am huge fan of the classic Tiramisu but two things I don't enjoy are that they call for raw eggs and they do involve a few dishes and some work. Absolutely worth it for the gorgeous flavour and texture they turn out to be but not every time one would have the zeal to go through the entire process. I choose to still make it by cutting out the complicated steps, keeping it's core ingredients intact and converting them into more-ish little portions that are so easy to whip up. Texturally these are creamy but light. When we did away with the eggs, we also took away some of the richness of the dessert and gave them an airy, moist texture. But the king is always the coffee. Rosewater Panna Cotta Tartlets

Delicate and delicious Rosewater Tartlets with a biscuit base and a panna cotta filling. No bake, no eggs and just very simple to put together. For the longest time I have been wanting to do something different with my photography and styling. While it's flattering to hear things like 'I can recognize your photos from a mile away' or 'your signature style' from my beloved followers, I'm a creative through and through. In my mind I grow and evolve only when I can constantly overcome new challenges or am able to do something entirely different. I think we all go through phases where we just want to experiment. We want to step out of our comfort zones. Sometimes we don't know where to start and at other times we are afraid whether our experiments would be accepted by the community we have built around our 'signature' styles. So when I made these delicious tartlets and shot them in the usual way I would, the pastel colours inspired me to do a second round of photography with a whole different setup.
