Coffee Cake

Coffee is one of those things that is indispensable to me. Of course, I'm not alone. My morning begins only when I've taken a sip from my favourite mug. Admittedly, I have been late in joining the coffee-drinkers club (only after I moved to Australia) but the love for coffee flavoured desserts dates back to my early baking days. It started with the first time I tasted mocha truffles and grew with the discovery of the Tiramisu. But this one is different. nothing fancy. You can call it a Coffee flavoured Coffee Cake. This is a moist, not too rich cake with a strong taste of coffee which is what I was after. Unless there's enough coffee flavour in there, you really can't taste it. Then I am happy drinking coffee. Why bother adding it to a cake? So after a few trials I came up with this recipe that I was finally happy with (because you don't want it to taste bitter either). It is quite easy to put together, actually everything is mixed in one bowl. I was supposed to share a different recipe today but this cake turned out so good that I couldn't wait until next week. After all, what better to make on the weekend than a good chocolate cake. When that chocolate cake is the most fudgy, outrageously delicious brownie cake you have to share it with the world, right?. A perfectly cracked top and a rich, moist interior and above all, a few simple ingredients that are mostly available at home. I've been under the weather this week and this cake got me all excited. I've made enough brownies and cakes in the last two decades to know a really good recipe. This is a keeper! It's Autumn over here and the light is beautiful. A subtle, diffused light that makes me want to stand outside and photograph everything I can lay my hands on. My children refer to the Panna Cotta as a 'milk jelly'! Sweet, creamy, jiggly and so delicious, it looks like a dessert that one would have spent time to create wherein the truth is that it is one of the quickest things to make. The fridge does all the work for you. Just like you would flavour milk or any other form of dairy, the Panna Cotta works on the same principle. After all it is a 'jellified' or rather version of milk. The beauty of this dessert is that it is incredibly versatile! Whether you like yours light or decadent or even extra creamy, you can choose between milk, half and half or cream. For people who are lactose intolerant, easily swap milk with dairy free alternatives nut milks, coconut milk, rice milk to name a few. Vanilla Funfetti Milkshake

Its been a while since I shared something simple and instant. Milkshake, smoothies and juices are a regular part of my cooking routine in the warmer months. I just don't get to share them as often. While I am a fan of thick smoothies, the twins love their milkshakes. Milkshakes are very reminiscent of childhood and I have delightful memories of sipping in the chilled goodness until there was nothing left but air. We didn't have as many fancy flavour choices back then and my favourite was Vanilla. That has remained unchanged today. To make it a little more dressy, I added whipped cream swirls and sprinkles. Desserts should have an element of drama about them. What say? Vanilla Funfetti Milkshake Serves 1 1/2 cup of 100s and 1000s (or any other sprinkles you want to use) 50 g white chocolate, roughly chopped 1 cup vanilla ice cream 3/4 cup milk 1 teaspoon pure vanilla extract 1 tbsp sugar Whipped cream, to serve extra sprinkles, to serve Place the sprinkles on a shallow plate.
