Rosewater And Poppy Seed Cake

You guys! I never thought you would love my experiments so much. When I make something I picture how much me, my family and friends would love to eat it. There are no other benchmarks for me. I barely look at trends, I don't care a hoot for what my traffic stats should look like or what makes a post … Read More

So I did give you a heads up on the amount of dough I have handled this month. Well, I just cannot stop! We are not even into proper cold months and I am on a baking overdrive. Strawberry And Apple Hand Pies
2|04|2016

Living up to the annual ritual in Autumn we went apple picking as usual. I can't say that they are my favourite fruit but something about the season, the weather and the orchards have ensured that we do it every year with the kids. This time we were a bit disappointed that there were more apples on the ground, than on the trees but nevertheless it was fun. I've been on a pie high lately. I've been making all kinds of fillings and playing around with pastry designs. A kitchen smelling of pastry, spices and fruit is the best place to be in my opinion. These apple strawberry hand pies were like a kick-starter to my pie baking this season. The highlight of our visit to the orchard this year however was not the apples. We discovered that the owner had started growing eggplants, peppers, kale, lettuce, zucchini and a whole lot of other veggies. Those were ready for picking as well. I warned the boys that if they picked they would have to eat all those veggies as well. Obviously no-one was listening and we came back with a boot full of freshly picked produce. We were also told that beets, cauliflower and winter bounty would be available from April. I can't wait to go … Read More
Easter Egg Cupcakes
25|03|2016

A quick post today to share these Easter egg filled cupcakes. It's a long weekend as you know and ours is longer because the school gave an extra holiday so I've hardly hard time to catch my breath. And of course eggs. Chocolate eggs are in every possible place imaginable in my house. And I am not even having an egg hunt. The perils of being a mum to young twins! I was quite sure I wouldn't have time to create Easter recipes but since I was making cupcakes, it struck me that I could have a little surprise hiding in the cupcakes. I flavored the Easter cupcakes with brown sugar and golden syrup (you could use maple syrup or even honey) for a caramel like taste and stuffed them with Cadbury creme eggs. Whipped chocolate ganache is my quick, easy handy frosting in these occasions so I made one and decorated the frosting with sprinkles. Needless to say, it made my little bunnies as happy as ever. After all who doesn't like cupcakes! Even if I am not eating them, I find them such a joy to look at when they are sitting on my cake stand. Easter Egg Cupcakes (cupcake batter slightly adapted from here) Makes 12 2 1/2 cups self-raising flour 1 tablespoon … Read More
Coconut Cake Minis With Blackberries And White Chocolate
19|03|2016

Berries are fabulous with coconut flavored desserts and so is white chocolate! I've been wanting to make a blackberry based cake for a long time but since I only had a small punnet of them at home, I decided to make mini cakes instead of a large one. Individually portioned desserts have their own appeal and are easier to decorate. Before I was the owner of a multitude of baking pans, my baking equipment was limited to a round cake pan, a muffin pan and a few ramekins. I got those 4 ramekins as part of a creme brule set and I put them to good use by baking miniature versions of all the bigger cakes recipes I knew at that time. So, I decided to go back in time and bake these coconut cake minis with blackberries in ramekins. They were then dipped in melted white chocolate and shredded coconut. Another reason I like the pairing is because together they are kind of monochrome to look at. They offer a lot of textural drama to a photo which I've been dreaming up to create on a grey backdrop! In other news, it has started to feel a bit like Autumn! The chill, the early sunset and the receding stone fruits. It's certainly a relief after the soaring temperatures and humidity in March. … Read More
Pickled Radish And Grapefruit Salad
15|03|2016

Pickling is a great way of adding flavor to vegetables whilst increasing their shelf life. Among all the pickled vegetables I've tasted, pickled radish is my favorite. When pink baby radishes start appearing at the farmer's markets, it'a sign that Spring is round the corner. And that is when salads at our place will inevitably start having them by the bunch. They are not the kind of vegetable children would love though due to the pungent and strong taste. Last spring I discovered that a better way of enjoying them was to store them in a quick pickling liquid. Not only do they take up the flavor of the sweet and sour pickling liquid but also turn into a pretty shade of pink. Whether it's a starter or a salad that you are serving them with, they are sure to take the dish up by several notches. This is a salad that will impress all. It has sweetness from the radishes, saltiness from the feta, a slightly bitter citrus punch from the grapefruit and loads of nutritious green leafy vegetables. Instead of making a dressing, I used the pickling liquid (that tastes amazing) to drizzle over the salad. I created this pickled radish salad for Styling Magazine last year when I was asked … Read More
