No Churn Ferrero Rocher and Raspberry Ice Cream
19|02|2016

Ferrero Rocher Ice cream that is made without an ice cream machine (no churn) with chopped ferrero rocher chocolatess and a raspberry swirl to make an easy, simple frozen treat. No churn ice creams have been all over the Internet in recent times. While they yield mostly similar results which is a delightful sweet frozen treat, the process used and ingredients vary from one another. There is the hugely popular frozen fruit and sugar instant ice cream, the whipped egg white version, the semifreddos, and this one with condensed milk and super simple to make. While some argue that this is not real ice cream, I would say that 'the proof of the pudding is in the eating thereof'! What you enjoy eating while making at the convenience of your own home and is a great substitute to store bought food is always a great option in my books. I take no credit for this recipe. The flavour additions are mine but the basic recipe has been made over and over again by many. It's a tried and tested ice cream using condensed milk and cream. Condensed milk gives the ice cream it's smooth silky texture whilst preventing it from becoming grainy. And of course, there is no end to the add-in options … Read More
Roasted Red Pepper And Strawberry Soup
16|02|2016

The weather in Sydney has little to do with soup at the moment. It certainly has a lot to do with strawberries. They are in abundance and I thought it was time I get a little creative with them. I have to admit, I am a bit tired of eating them raw or with breakfast, dessert and drinks. I've made enough frozen treats. Cold soups have never been my thing. So why not savory..a warm strawberry soup, I told myself! I had a jar of roasted red peppers at home and the combo paired well in my mind. Something new! Something delicious! And you really can't go too wrong with them. Taste wise, this is similar to a tomato soup which is acidic and sweet at the same time. There are bags of flavour in this soup that I did not want to dilute by adding cream or milk. If you like a creamy soup, by all means go ahead and add coconut milk or fresh cream. A hint of balsamic vinegar gives it depth and honey completes the balance. What stands out is that you can taste or smell or feel the presence of the strawberries but they are not overpowering at all. Finally, it's a delicious soup, looks dainty but impressive enough to hold your guests attention and curiosity. Notes: I used store bought … Read More

Lemon Meringue Tart
9|02|2016

Happy National Pancake Day! I know, there's no pancake in this post. But you know what! I am so bad in remembering days other than a few birthdays and some important dates that I am making it a a point to be a bit more aware and alert this year. Actually, I did forget again but thanks to Instagram and social media I've been seeing mouthwatering pancakes all morning. I craved pancakes and thought I should make some. But there was this lemon meringue tart in the fridge along with chocolate cake, a no-churn ice cream in the freezer and a panna cotta duo in the making. There's too much going on so pancakes are on hold at the moment. Let's eat lemon meringue tart! I was going through my recipe archives when I realized I haven't shared the Lemon Meringue Tart recipe that I make so often, especially for picnics and get-togethers. It makes a medium sized tart, so easy to move around with, simple to make and I've been making it since years. When I was trying my hand at tarts for the first time, I struggled to get the rolled pastry on to the tart pan. It would tear or just would not be enough to fit into the pan or sometimes the dough would be too hard to roll as I left it too long in … Read More
