Winter is very synonymous with carrots and oranges at my place. Perhaps something to do with the cold season during my growing up years in India when this kind of produce was seasonal. I have promised this recipe weeks ago but I haven't been able to sit down and open my website at all, let alone post a recipe. I apologise! A few significant changes (good changes) are happening in my life at the moment and I have been really busy. I will share when the time comes. This is my second granola cake in recent times. To say I am obsessed is an understatement. We have been eating granola with yogurt regularly for breakfast mainly for the convenience and inclusion of nuts and fruit but the possibility of using it as a topping for muffins and cake is far too tempting. The cake is really easy to make, however, it is baked in two stages. We bake the batter partially, then remove it from the oven to add the topping. Then it is baked until fully cooked through. This is done to prevent the top from overcooking and burning. Honey in cakes is another thing I absolutely love. The flavour is amazing.! But it is also healthier than using regular sugar. So since I was using honey, I felt I could make this cake refined sugar free by using coconut sugar. Feel free to use regular sugar/castor sugar if that is available to you. Who does not love an Oreo cookie? I have to admit though, I love the treats made with Oreo cookies even more. Especially when they are crumbed and mixed into baked goods. These cupcakes not only include a double dose of Oreo cookies because there is a cookie inserted in the middle of the cupcake before baking as well as in the buttercream, they also are eggless. So more people can enjoy them! These Oreo cupcakes are easy to put together and are ready in no time. The buttercream is honestly so good that you have to hold yourself back from licking it off the bowl. Eggless Oreo Chocolate Cupcakes Makes 10-12 cupcakes For the chocolate cupcakes1 cup self raising flour1/2 cup plain flour1/2 tsp bicarbonate soda1 cup castor sugar4 tbsp powdered cocoa75 g unsalted butter, melted1 cup milk1/2 tsp vanilla extract 10-12 Oreo cookies. Chocolate and Almond Tart

Delicious and decadent Roasted Almond and Chocolate Ganache Tart in a buttery crust, decorated with whipped chocolate ganache. I make tarts quite often! They are like my blank canvas to play with colours, patterns and decorations. Some very easy ones that involve no baking at all and others that are baked with a custard or cheesecake filling. Seldom have I made a tart like this one that involves part baking to create a buttery crust while the filling is just a pour and set kind of activity. You could absolutely use a no-bake crust for this one like here and here too. The other fun thing about this tart is that it uses chocolate ganache, both as a filling as well as a frosting to decorate the tart. Again, you could leave out the frosting entirely and enjoy the roasted almonds encased in an ultra choclatey base. I think I was feeling too creative while making this tart , hence all the additions.
